Black Bean and Corn Salad Salad

Ingredients:

  • 1 can black beans, drained and rinsed
  • 1 ½ cup corn kernels
  • 1 red bell pepper, diced
  • ½ avocado, chopped
  • 1 green onion, thinly sliced
  • 2 tbsp minced cilantro Dressing Ingredients:
  • 2 tbsp extra virgin olive oil
  • Juice of ½ a lime
  • 1 tsp agave nectar
  • ¾ tsp ground cumin
  • ½ tsp kosher salt

Directions:

  1. In a small bowl, whisk together olive oil, lime juice, agave nectar, cumin, and salt.
  2. In a medium sized bowl, stir together black beans, corn, bell pepper, avocado, green onion, and cilantro.
  3. Pour the dressing over the black bean mixture and toss gently to combine.
  4. Pack into mason jars to take along on your picnic. Enjoy!
