While You Were Sleeping, Burgoo Stew was Cooking

In the wee hours of the morning, Burgoomeister  Mark Weisbrod was busy overseeing everything it takes to make Utica’s Burgoo Stew the fast-selling meal it is.

“This is my first time as Burgoomeister,” Weisbrod said. “I worked with Amanda Carter (La Salle County Historical Museum Director) and the next thing you know, I’m it,” he smiled.

Nathan Miller was assisting Weisbrod last night. There are a lot of things to do before the stirrers take over. He knows all about the stew.

“I’d say the six kettles hold about 50 gallons of Burgoo,” he said.

“We’ll be able to start stirring about 9:30 tonight,” Weisbrod said. “It takes time to chop and saute the vegetables, so everything must be timed perfectly.” We have to make sure the beef’s not burned, the vegetables aren’t mushy, and the seasoning is just right.”  Weisbrod said. “Timing is everything when it comes to our burgoo.”

With large canoe paddles, eight volunteer stirrers started cooking throughout the night in shifts that began last night around 9:30 p.m. Four worked the night shift, and another four volunteers worked until the stew was ready by 9:00 a.m.

Like every year, Burgoo is the star of the fest.

“The Burgoo goes on sale at 9:00 a.m.,” Carter said, “and we usually sell out quickly,” How quickly always depends on the weather. Hot or cooler temperatures make a difference in how long 300 gallons of Burgoo lasts.”

An 8-ounce bowl sells for $8.

“It’s a responsibility for sure,” Weisbrod said. “But by morning? it’s always worth it.”

The two-day, open-air Burgoo Festival regularly attracts more than 30,000 people. Besides Burgoo, about 350 vendors, games for children, and live entertainment will line the Mill Street area.

Burgoo begins its second day on Sunday, Oct. 8, at 9:00 a.m. and ends at 5:00 p.m. Burgoo Crew members will sell 50/50 raffles to benefit the La Salle County Historical Society Museum and the Utica Fire Department.

“We haven’t sold the Burgoo out completely yet,” Carter said at about 11:15 a.m. Sunday morning, “so come on down!  Not just for burgoo but for the day itself. It’s fun for everyone and we look forward to these two days every year.”
